I am a 76 year old (born 7/4/1937) retired Public Radio Engineer from Lawrence University in Appleton, Wisconsin. Happily married to the love of my life, Teddy (nee Teddy Schlueter). Teddy is a retired Medical Records Clerk from Theda Clark Hospital in Neenah, Wisconsin. Two children, Michael and Lon. Lon passed away in 1994. Michael is married to his wonderful wife, Toni and lives in Appleton, Wisconsin. The Inside-out Grilled Cheese Sandwich

This crispy, crunchy, cheesy masterpiece is the ultimate grilled cheese sandwich.

You know how once in a while you run across a slice of pizza where some of the cheese has dripped over the edge and caramelized onto the bottom of the crust? 

You know how when you bite into that delicious deformity you think to yourself, "why can't the whole thing be like this?"

Well, it can. 

For this to work properly,
  1. I love Teddy's homemade bread but for this use only, nutritionally insignificant white bread. 
  2. Use a nice sharp cheddar cheese. 
  3. Be sure to use a quality non-stick pan over medium to medium-low heat.

This has changed forever how I look at a grilled cheese sandwich! 

The only modification that I make is to add onion.



On Wednesday & Thursday mornings, Teddy volunteers at a local thrift store and I'm on my own for breakfast...............So.....last Thursday...



...Buoyed up by my success in making
the inside-out sandwich, I decided
 to experiment with what I call
 "Inside-out cooking".

In a flash of inspiration I made 
an inside-out cheese omelet
 shown here.








If I do say so myself, it turned out nicely. I proceeded to make a regular omelet but after I folded it I added shredded cheddar to the outsides and caramelized it the same way as for the grilled cheese. That plus a cup of hot black coffee, toast and the morning paper crossword made for a very nice breakfast.

Ten things I like starting with the letter “C”

1. Computers: Technophile that I am, my computer is one of my favorite possessions.
2. Cookies: Teddy makes ‘em and I eats ‘em
3. Cutty-Sark Scotch: I also enjoy Grant's, & Ballantine blended Scotchs and if I’m feeling rich Knockando single malt is a pretty good choice.
4. Cats: We have always had a cat as a member of our family and our current cat is named NASDAQ, we call him Nazzie. He spends most evenings laying on my lap, purring loudly.
5. Canada: We have many friends from our neighbor to the north.
6. Cardinal: Our Cardinal trailer is our fulltime RV home.
7. Coffee: Must have my morning coffee.
8. Cheese: Being from Wisconsin, I consider cheese to be one of the seven basic food groups.
9. Cap: My Greek fisherman’s cap is my personal trademark. Without it no-one would recognize me.
10. Cuddle: I can’t get along without an occasional cuddle with my honey & life partner, Teddy.

Early Morning Walkers

The rain failed to dampen the enthusiasm of these early morning walkers. It's about a mile for a full lap around the park and two to eight gals, depending on the morning, usually make about three or four laps and then stop into the Clubhouse for coffee.
The Guys, however don't see the point of walking in circles and every morning about six or eight of us head directly to the clubhouse for a morning bullshit session that usually lasts about two hours beginning shortly after six am. When the women come in, though we leave as we mysteriously become mute and lose our ability to speak
